Supports Immune Function
Shiitake (Lentinula edodes) contains lentinan, a powerful beta-1,3-glucan that has been the subject of decades of immunology research. Lentinan helps stimulate immune cell activity — including macrophages, natural killer (NK) cells, and T-cells, and has been shown to support cytokine production involved in the body's immune response. It is so well-studied that it has been approved as an adjunct cancer therapy in Japan and China. Beyond lentinan, shiitake also contains AHCC (active hexose correlated compound), another glucan compound with a growing body of clinical research behind it that backs its value for promoting the body's natural immune response.
Research Support:
A randomized dietary intervention in 52 healthy male and female adults found that daily shiitake mushroom consumption over four weeks significantly improved immune cell proliferation. In particular, it showed 60% more gamma-delta T-cells and 200% more NK T-cells. It also showed increased secretory immunoglobulin A (sIgA), and altered cytokine secretion in ways consistent with a stronger, better-regulated immune response, improved gut immunity, and lower inflammation.

A clinical review found that lentinan stimulates the release of multiple cytokines including IL-1α, IL-2, IFN-γ, and TNF-α, and that clinical trials show improved survival outcomes and immune function in cancer patients using lentinan when used in addition to chemotherapy.

Shiitake is one of the only natural sources of eritadenine, a unique alkaloid compound that may help lower blood cholesterol by influencing how the liver processes lipids. It works through a distinct mechanism from pharmaceutical cholesterol-lowering drugs, affecting phospholipid metabolism in the liver rather than blocking cholesterol synthesis directly. Shiitake's beta-glucans also contribute to heart health by binding bile acids in the gut and reducing their reabsorption, which prompts the liver to draw more cholesterol from circulation.

A study found that shiitake-supplemented diets reduced total cholesterol, non-HDL cholesterol, and triglycerides in rats of both sexes, with effects attributed to both eritadenine and additional bioactive compounds present in the whole fruiting body.

Rich in Antioxidants and Supports Cellular Health
Shiitake contains a broad range of antioxidant compounds, including phenolic acids, ergothioneine, and selenium — nutrients that help neutralize free radicals and reduce oxidative stress. Ergothioneine in particular is a rare amino acid found in high concentrations in mushrooms and is being actively studied for its role in protecting cells and DNA from oxidative damage. Shiitake is also a source of ergosterol, the precursor to vitamin D2, making it one of the few non-animal food sources of this important nutrient.
